Buttery, creamy butternut squash

I tried the roasted butternut squash and shaved Pecorino risotto from the M&S “eat well” range and it was really pretty tasty. I would have liked it with some crumbled pancetta or smoked bacon and surprisingly for me a little chilli kick like the lovely Strada version but this makes a very fine comforting vegetarian version. Butternut squash has such a fabulous texture for soups and melds so beautifully with a nice creamy risotto. Another success in the rather extensive “eat well” line, I think.
